When you think of soft freshly baked treats like gourmet muffins, biscuits, and bread, spinach is not one of the key ingredients that come to mind. Well not until Lufefe Nomjana, a social entrepreneur and health fundi who is radically changing the way we perceive and eat healthy food.
Espinaca (Spanish for spinach) Innovations was created in 2012 from a neighbour’s oven by Lufefe who baked bread that consisted of spinach and other various organically grown and preservative-free ingredients. This health-inspired baker wants to transform the eating habits of residents from ekasi and the nation at large. Being a vegetarian, he has put in the hours in creating scrumptious yet healthy meals such as his famous spinach bread and gourmet muffins.
From walking nearly 25km a day delivering his bread, Lufefe has managed to grow Espinaca Innovations into purchasing bicycles that will deliver his tasty goods to regular customers faster and efficiently. A container transformed into a modern-day bakery is where all the baking magic happens. It’s at this bakery that we got to meet Lufefe and his family.

Much like a perfectly baked loaf of Espinaca bread, Lufefe rose to the occasion. We salivated at the site of his muffins, but also loved his energy, admired his passion, and we salute his mission.
